Abstract


The present research, entitled « Nutritional and dietetic potentiality of ants and winged ants on sale at the market of Lubumbashi/DRC »; aims at making available scientific information related to insects sold in the city of Lubumbashi: Case of ants and winged ants (Makalo and Inswa respectively in a local language). The analysis of these sample reveals: - 4,95 % fats (Ants) and 39,8 % (winged-ants); - 40,2 % and 35,6 % proteins respectively for ants and winged-ants. Winged ants are richer in mineral elements than ants in decreasing order Mn, Ca, Na, Mg, Fe. Edible insects thus show some potentialities: - They contain highly digestible proteins; - They are tender and without collagens; - Toxicity risks and fermentation could be discarded. - They may contain a good proportion of polysaturated fat acids. From what precedes, edible insects are particularly useful in dietetic therapy for food dietary of pathologies which need elimination or reduction of the consumption of meat, proteins and/or that of saturated fat.

La présente recherche; intitulée: « Potentialités nutritionnelle et diététique des termites et termites ailés rencontrés sur le marché à Lubumbashi/RDC » ; a pour but de vouloir rendre disponible les informations scientifiques relatives aux insectes vendus à Lubumbashi. Cas des termites et termites ailés (makalo et insua respectivement en langue locale). L’analyse de ces échantillons révèle: - Pour matière grasse 4,95% (termites) et 39,8 % (termites ailés); - Pour les protéines 40,2% et 35,6% respectivement pour termites et termites ailés; Termites ailés sont plus riches en éléments minéraux que les termites en ordre décroissant Mn, Ca, Na, Mg, Fe. Ainsi, les insectes comestibles présenteraient certaines potentialités: - Ils ont des protéines qui sont très digestibles; - Ils sont tendres et donc sans collagène; - Les risques des toxiques et fermentations seraient écartés; - Ils contiendraient une bonne proportion d’acides gras poly-insaturés. De ce qui précède, les insectes comestibles (Isoptera) sont particulièrement utiles dans la dietetico-thérapie pour les régimes alimentaires des pathologies qui exigent l’élimination ou la réduction de la consommation de la viande, des protéines et/ou celle de la graisse saturée.
