Abstract


Seasonings are nowadays indispensable ingredients in food preparation in general and especially in South of Benin. They are omnipresent on all displays of saleswomen condiments and various products, and are sometimes exposed to the bad weather. A sociocultural investigation was conducted to South of Benin, from December 2012 to July 2013 (approximately eight month), and was related to the consumption of flavor commonly called "cube" in this area. The purpose is to identify the range of "cube" seasonings the most used. It comes that we may evaluate the nutritional quality of these products. After the analysis, it arises that the glutamate has a higher content of total proteins (36.960%). Then, follow respectively Cookzen (14.840%), Maggi chicken (9.800%), Jumbo chicken (8.68%) and finally, Aroma Maggi (7.560%). The highest content of salt is found in Jumbos Chicken (53.675%), followed respectively by Maggi chicken (47.525%), Cookzen (38.8 Glutamate (37.307%) and Aroma Maggi (17.660%). The lowest value of the pH is found in Aroma Maggi (4.530), while Maggi chicken (5.860) and Jumbo chicken (5.270) have approximately the same pH.

Les bouillons d’assaisonnement sont, de nos jours, des ingrédients indispensables dans les préparations culinaires en général, et au Sud-Bénin en particulier. Ils sont omniprésents sur tous les étalages des vendeuses de condiments et produits divers, et sont parfois exposés aux intempéries. Une enquête socioculturelle menée au Sud-Bénin de Décembre 2012 à Juillet 2013 (environ huit mois) a porté sur la consommation des exhausteurs de goût communément appelés «cube» dans cette région. Le but est de connaître la gamme de bouillon «cube» la plus usitée. Il est apparu opportun d’évaluer la qualité nutritionnelle de ces produits par la détermination de certains éléments indispensables pour le bon fonctionnement de l’organisme humain. Des résultats des analyses, il ressort que le glutamate possède une teneur plus élevée en protéines totales (36,960%). Ensuite, suivent respectivement les gammes Cookzen (14,840%), Maggi poulet (9,800%), Jumbo poulet (8,68%) et enfin, Arôme Maggi (7,560%). La teneur en sel la plus élevée se retrouve au niveau de la gamme Jumbo Poulet (53,675%), suivies respectivement des gammes Maggi poulet (47,525%), Cookzen (38,840%), Glutamate (37,307%) et Arôme Maggi (17,660%). La valeur la plus faible du pH se retrouve au niveau de la gamme Arôme Maggi (4,530), tandis que les gammes Maggi poulet (5,860) et Jumbo poulet (5,270) ont sensiblement le même pH.
