Abstract


Cashew apple, was a false fruit of cashew tree. It was not valorized because of its astringency. In the purpose of valorization of this fruit in juice, this study showed the impact of coupling of crossflow microfiltration and vacuum concentration on the juice quality. Crossflow microfiltration tests were carried out on the raw cashew apple juice followed by its concentration by vacuum concentration at different temperatures (40, 60 and 80 ° C). Different juices (clarified and concentrated) obtained were characterized and compared to the raw one. The results showed that the crossflow microfiltration eliminated tannins and therefore astringency. It was not affected the nutritional value of the juice. Concerning the vacuum evaporation, it was not influenced on titrable acidity, whatever the temperature. However, it affected the vitamin C content, color and flavor profile of the juice. This process increased losses of vitamin C depending the temperature. Regarding color, we noted that, juices concentrated has a high absorbance between 400 and 480 nm. More the temperature of vaccum evaporation was high more the absorbance was important. Finally, the flavor profile of concentrated juice obtained by vacuum evaporation was modified from the clarified juice obtained by crossflow microfiltration.

La pomme de cajou, faux fruit de l’anacardier n’est pas valorisée à cause de son astringence. Dans le but de la valorisation de ce fruit en jus, cette étude présente l’impact du couplage de la microfiltration tangentielle et la concentration sous vide sur la qualité du jus. Des essais de microfiltration ont été réalisés sur le jus brut de pomme de cajou suivie de sa concentration sous vide à différentes températures (40, 60 et 80°C). Les différents jus (clarifié et concentrés) obtenus sont caractérisés et comparés au jus brut. Les résultats montrent que la microfiltration tangentielle permet d’éliminer les tanins et par conséquent l’astringence sans affecter la valeur nutritionnelle du jus. Concernant la concentration par évaporation sous vide, elle n’a pas d’influence sur l’acidité titrable, quelle que soit la température. Cependant, elle influe sur la teneur en vitamine C, la couleur et le profil aromatique du jus. Ce procédé induit des pertes croissantes de vitamine C en fonction de la température utilisée. Concernant la couleur, nos notons que les jus concentrés présentent une absorbance élevée entre 400 et 480 nm. Plus la température d’évaporation est élevée plus l’absorbance est importante. Enfin, le profit aromatique du jus concentré par évaporation sous vide est plus modifié par rapport au jus clarifié par microfiltration.
