Abstract


The consumption of salads of the fourth range (4th range) has become increasingly worrying in Abidjan (Côte d'Ivoire). This work was undertaken to determine the microbiological status of these foods during the period of domestic conservation (7°C) after opening the packaging in order to prevent the risk of intoxication from bacterial pathogens. The material and methods used for the microbiological analyses refer to the techniques of classical microbiology followed by statistical tests through R4.1.2 and excel software. The results obtained showed that the 4th range salads sold in the hypermarkets of the city of Abidjan were highly contaminated by bacterial pathogens such as S. aureus with a prevalence of 24%, E. coli O157: H7 with 16% and Salmonella spp. with 18%. On opening the packages (D0), 63.43% of the salads were unfit for consumption, 5% had an acceptable load and 31.57% were of satisfactory microbiological quality. On the third day (D3), the rate of salads unfit for consumption increased (68.43%). On the seventh day (D7), the microbiological quality was the same as on the third day. However, the Salads of the Green Oaks (SChV) and the Meli melo salads (SMe), with perforated packaging were more conducive to the growth of the pathogens studied. Domestic refrigeration does not guarantee the safety of 4th range salads after opening the packages.

La consommation des salades de quatrième gamme (4ème gamme) est devenue de plus en plus préoccupante à Abidjan (Côte d’Ivoire). Ces travaux ont été entrepris pour déterminer le statut microbiologique de ces aliments durant la période de conservation domestiques (7 °C) à près ouverture des emballages afin de prévenir les risques intoxications vis-à-vis des pathogènes bactériens de portages. Le matériel et les méthodes utilisés pour les analyses microbiologiques font références aux techniques de la microbiologie classique suivi des tests statistiques à travers les logiciels R4.1.2 et excel. Les résultats obtenus ont montré que les salades de 4ème gamme vendues dans les Hypermarchés de la ville d’Abidjan étaient fortement contaminées par les pathogènes bactériens de portages comme S. aureus de prévalence 24 %, E. coli O157: H7 de 16 % et Salmonella spp. de 18 %. A l’ouverture des emballages (J0), 63,43 % des salades étaient impropres à la consommation, 5 % avait une charge acceptable et 31,57% de qualité microbiologique satisfaisante. Au troisième jour (J3), le taux des salades impropres à la consommation a augmenté (68,43 %). Au septième jour (J7), la qualité microbiologique était de même que celle du troisième jour. Cependant, les Salades des feuilles de Chênes Vertes (SChV) et les salades Meli melo (SMe), avec des emballages perforés étaient plus propices à la croissance des pathogènes étudiés. La réfrigération domestique ne garantir donc pas la sécurité sanitaire des salades de 4ème gamme après ouverture des emballages.
