Abstract


This study aims to value the traditional manufacturing process of "tchakpalo" produced with sorghum (Sorghum bicolor (L) Moench) and its stabilization by H. bracteosa (Benth) sheet. A survey was conducted to identify the different manufacturing processes of tchakpalo in Benin. Major chemical groups characterizing the H. bracteosa (Benth) leaves were identified by technique using suitable solvents. The antifungal properties of aqueous extract of H. bracteosa (Benth) leaves were evaluated by the agar diffusion method against strains responsible of the rapid spoilage of the drink. Tannins, the cathechic tannins, flavonoids, anthocyanins, leucoanthocyanes, saponins and mucilage are the predominant compounds of H. bracteosa (Benth) leaves. Antifungal activities of this plant varied depending on the test mold. The addition of the powder during the pasting showed its effect on physico-chemical parameters providing a slightly sweet drink, less acidic, with low alcohol content and makes stable drink with 64% inhibition on total aerobic mesophilic bacteria, 100% and 61% inhibition on mold and coliforms respectively, counted in the drink. In addition, the Hemizygia bracteosa (Benth) powder seems to have no effect on beneficial yeasts for fermentation that were eliminated by pasteurization.

Cette étude vise la valorisation du procédé traditionnel de fabrication de la boisson « tchakpalo » produite avec du sorgho (Sorghum bicolor (L) Moench) et sa stabilisation par utilisation de la feuille de H. bracteosa. Une enquête a été réalisée afin de recenser les différentes technologies de production du tchakpalo au Bénin. Les grands groupes chimiques caractérisant les feuilles de H. bracteosa (Benth) ont été identifiés par des techniques utilisant des solvants appropriés. Les propriétés antifongiques de l'extrait aqueux des feuilles de H. bracteosa (Benth) ont été évaluées par la méthode de diffusion en agar contre les souches responsables de l'altération de cette boisson. Les tanins, les tanins cathéchiques, les flavonoïdes, les anthocyanes, les leucoanthocyanes, les saponosides et les mucilages sont les composés prépondérants des feuilles de H. bracteosa (Benth). Les activités antifongiques exhibées par cette plante ont varié en fonction de la moisissure testée. L'adjonction de la poudre de H. bracteosa (Benth) au cours de la phase d'empattage a engendré une modification des paramètres physico-chimiques, rendant ainsi la boisson légèrement sucrée, moins acide avec un faible degré d'alcool. Les paramètres microbiologiques évalués ont montré une augmentation significative de sa stabilité avec 64 % d'inhibition sur la flore aérobie mésophile totale, 100 % d'inhibition sur les moisissures et 61 % sur les coliformes. Par ailleurs, les feuilles pulvérisées de H. bracteosa (Benth) semble ne pas avoir un effet sur les levures utiles mais qui ont été éliminées à la fin de la fermentation par pasteurisation.
