Abstract


The vinegar is obtained by a double fermentation of two measures of juice of mango with a measure of water in the presence of the yeast Saccharomyces Cerevisiae for the first fermentation and for the second fermentation, the wine obtained in the first fermentation is added to 10 % of its volume by a mother of vinegar containing the bacterium Acetobacter Aceti. The fermentation lasted 47 days. From the microbiological point of view, the elaborate vinegar is exempt from any pathogenic germ. In spite of its relatively low acidity pH approximately 3, its rate of soluble solids brought up approximately 5,4

Le vinaigre est obtenu par une double fermentation de deux mesures de jus de mangue avec une mesure d’eau en présence de la levure Saccharomyces Cerevisiae pour la première fermentation et pour la seconde fermentation, le vin obtenu à la première fermentation est additionné à 10% de son volume par une mère de vinaigre contenant la bactérie Acétobacter Aceti. La fermentation a duré 47 jours. Du point de vue microbiologique, le vinaigre élaboré est exempt de tout germe pathogène. Malgré son acidité relativement basse pH environ 3, son taux de solides solubles élevé environ 5,4 °Brix, sa matière sèche de 2,3%, sa densité de 1,02 g/l, son taux de cendre faible de 0,20% et de sa conductivité électrique légèrement supérieure de l’ordre de 3,83 mS/cm par rapport au vinaigre commercial. La teneur en protéines, de l’ordre de 2,26% reste élevée par rapport au vinaigre commercial. La concentration en éléments minéraux de l’ordre de 6,012 pour le Ca2+ et de 2,917 pour le Mg2+ ; avec une teneur en alcool faible 0,56% et une acidité titrable faible par rapport au vinaigre commercial 5,388°.
