Abstract


This study aims to determine the impact of fortification of wheat flour by the undefatted seed of Citrullus lanatus (Cucurbitaceae) on blood biochemical parameters and biometry of organs. Thirty (30) rats were fed for 14 days with six diets. A control casein diet (RTC), a classic bread diet (RPC) and four diets fortified bread (RPFnd) where wheat flour was substituted for the rate 5% (RPFnd5); 10% (RPFnd10);15% (RPFnd15) and 20% (RPFnd20) by undefatted seed meal of Citrullus lanatus. After the experimental period, the animals were sacrificed and their blood is levied to assay metabolites. Their organs are also levied and weighed. The results indicate that glyceamia and uremia for the rat of RPFnd diet have undergone changes compared to those of rats fed by RTC and RPC diets. The fortification had no effect on other blood biochemical parameters. The animals of CBD diets had a ponderale increase kidney and stomach substitution rate of 15% and/or 20% compared to the rats of RTC diet. There was no change in other organs weight (p ≥ 0, 05) for all diets. However the rats of diet RPFnd20 had got light-colored livers. Histological studies are, nevertheless required to see if these changes have pathological consequences of these organs.

Cette étude vise à déterminer l’impact de la fortification de la farine de blé par celle des graines non delipidées de Citrullus lanatus (Cucurbitacées) sur les paramètres biochimiques sanguins et la biométrie des organes. Trente (30) rats, ont été nourris pendant 14 jours avec six régimes alimentaires. Un régime témoin caséine (RTC), un régime pain classique (RPC) et quatre régimes pains fortifiés (RPFnd) où la farine de blé est substituée aux taux de 5 % (RPFnd5); 10 % (RPFnd10); 15 % (RPFnd15) et 20 % (RPFnd20); par celle de farine de graines non delipidées de Citrullus lanatus. Après la période expérimentale, les animaux sont sacrifiés et leur sang est prélevé pour doser les métabolites. Leurs organes sont également prélevés et pesés. Les résultats indiquent que les glycémies et les urémies des rats des régimes RPFnd ont subi des variations par rapport à celles des rats des régimes RTC et RPC. La fortification n’a, par contre, pas eu d’effets sur les autres paramètres biochimiques sanguins. Les animaux des régimes RPFnd ont eu une augmentation pondérale des reins et d’estomac aux taux de substitution de 15 % et/ou 20 % par rapport à ceux des rats du régime RTC. Il n’y a pas eu de variation pondérale (p ≥ 0,05) des autres organes pour tous les régimes étudiés. Cependant les rats du régime RPFnd20 ont eu des foies de couleur pâle. Des études histologiques sont, néanmoins, nécessaires pour savoir si toutes ces modifications ont des conséquences pathologiques sur ces organes.
