Abstract


An important part of the production of dates is unmarketable or has a low commercial value. The valorization of this unmarketed production is done by the transformation. Among the old transformations anchored in the local traditional knowledge, there is the date syrup. It is a local product with great heritage value. Currently, there is a modernization of the production of date syrup, which leads to a regression of the traditional craft production of the product. This study aims to make a significant contribution to the knowledge and analysis of local know-how associated with this craft production. To this end, surveys were conducted in the oases of two regions of the pre-Saharan zones of Morocco, Alnif and Tata. The results of the survey provided information on the different aspects of the traditional manufacturing processes, from the choice of varieties used to the packaging and storage of the product.

Abstract: (french)


Une partie importante de la production de dattes est impropre à la commercialisation ou elle a une faible valeur commerciale. La valorisation de cette production non commercialisée se fait par la transformation. Parmi les transformations anciennes ancrées dans le savoir traditionnel local, il y a le sirop de dattes. C’est un produit de terroir à grande valeur patrimoniale. Actuellement, on assiste à une modernisation de la production du sirop de dattes, ce qui engendre une régression de la production artisanale traditionnelle du produit. La présente étude a pour objectif d’apporter une contribution significative à la connaissance et à l’analyse du savoir-faire local associé à cette production artisanale. Pour cela, des enquêtes ont été réalisées dans les oasis de deux régions des zones présahariennes du Maroc, Alnif et Tata. Les résultats des enquêtes ont apporté des informations sur les différents aspects des procédés traditionnels de fabrication à partir du choix des variétés utilisées jusqu’au conditionnement et stockage du produit.
